If you're really close to the family, you can start a Registered Education Savings Plan (RESP) for baby. This is something a lot of grandparents or godparents like to do. You put in a lump sum and it will sit there and grow as baby grows. The parents can choose to add to it if they like.
If you have the knack for painting or drawing and the baby shower is taking place after baby is born, you can paint or draw a picture of them for a gift. You can't get much more personal than that.
When it comes to gift giving, it really is the thought that counts. When someone sees how much thought you put into their gift, or their baby's gift, it means the world to them. If you're creative enough, you can come up with something that they'll never forget.
